  • 1 cup Parmesan cheese, grated
  • 1 cup ricotta cheese
  • 3 eggs
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup onion, chopped
  • 2 tablespoons olive oil
  • Fresh herbs (e.g., basil or parsley) for garnish

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grate the zucchinis using a box grater or food processor, then squeeze out moisture with a clean kitchen towel.
  3. In a mixing bowl, combine the grated zucchini, ricotta cheese, and Parmesan cheese.
  4. Add the eggs, salt, pepper, and chopped onions, then whisk until blended.
  5. Fold in the flour and baking powder until just combined.
  6. Drizzle in the olive oil and mix gently until incorporated.
  7. Grease a baking dish with olive oil or butter and pour the mixture in, smoothing the top.
  8. Bake for 30–35 minutes, until golden brown and a toothpick inserted comes out clean.
  9. Garnish with fresh herbs and serve warm or at room temperature.
