Zucchini Oatmeal Chocolate Chip Cookies

  • 1 cup rolled oats
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup butter, softened
  • 1 egg
  • 1 teaspoon vanilla extract

  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grab a medium bowl and combine shredded zucchini and a pinch of salt.
  3. Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  4. Add the egg and vanilla extract to the mixture and mix well.
  5. Whisk together rolled oats, flour, baking soda, baking powder, ground cinnamon, and salt in another bowl.
  6. Gradually add the dry ingredients to the wet mixture, stirring gently.
  7. Fold in the shredded zucchini and chocolate chips.
  8. Scoop mounds of dough onto a parchment-lined baking sheet and bake for 10-12 minutes.
  9. Cool on a wire rack for 5 minutes before serving.

Notes

Consider adding nuts, coconut, or spices for variations. These cookies are best stored in an airtight container.
