  • Salt and pepper to taste

Instructions

  1. Prep your ingredients by washing and chopping the vegetables, zesting and juicing the lemon, and mincing the garlic.
  2. Cook the quinoa by combining it with chicken broth (or water) in a medium saucepan, bringing it to a boil, then covering and simmering for about 15 minutes.
  3. Sauté the chicken in olive oil, seasoned with salt, pepper, oregano, and thyme, for about 5-7 minutes per side.
  4. Add garlic and lemon juice to the pan when the chicken is nearly done, cooking for an additional minute.
  5. Combine the cooked quinoa and sautéed chicken in bowls, topping with vegetables and fresh herbs.
