  • 1 cup Unsweetened shredded coconut
  • 1/4 cup Honey (or maple syrup for a vegan version)
  • 2 tbsp Fresh lemon zest
  • 3 tbsp Fresh lemon juice
  • 1 tsp Vanilla extract
  • 1/8 tsp Turmeric (for natural yellow color)
  • A pinch of salt
  • Extra shredded coconut (for rolling)

Instructions

  1. Combine Dry Ingredients: In a large mixing bowl, combine the almond flour, shredded coconut, and turmeric. Mix them well until they are thoroughly incorporated.
  2. Mix Wet Ingredients: In a separate bowl, mix together the honey (or maple syrup), lemon zest, lemon juice, vanilla extract, and salt. Stir until everything is well combined.
  3. Combine Mixtures: Gradually pour the wet mixture into the dry ingredients. Use a spatula or your hands to mix until everything comes together.
  4. Chill the Dough: Cover the bowl with plastic wrap or a lid and place it in the refrigerator for about 15–30 minutes.
  5. Roll into Balls: Once chilled, take a small amount of the mixture and roll it into bite-sized balls (about 1 inch in diameter).
  6. Coat with Coconut: Roll each ball in extra shredded coconut until they’re well coated.
  7. Store and Enjoy: Place the bliss balls in an airtight container in the fridge, where they’ll firm up even more.
