Delicious Wild Rice Soup

A hearty and comforting wild rice soup, perfect for chilly evenings. Filled with rich flavors from wild rice and a medley of vegetables.

Ingredients

  • 1 cup wild rice
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 8 cups vegetable or chicken broth
  • 2 cups mushrooms, sliced
  • 1 teaspoon thyme
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 cup heavy cream (optional)

Instructions

  1. Rinse the wild rice in cold water to wash away debris.
  2. Sauté the onions, carrots, and celery in olive oil over medium heat for 5-7 minutes.
  3. Add the minced garlic and thyme, and sauté for another minute.
  4. Fold in the sliced mushrooms and cook until they release their moisture, about 5 minutes.
  5. Pour in the broth and bring to a gentle boil, then stir in the rinsed wild rice.
  6. Reduce the heat to a simmer, cover, and let cook for 45-50 minutes until the rice is tender.
  7. If using, stir in the heavy cream about 5 minutes before serving.
  8. Taste and season with salt and pepper.
  9. Ladle the soup into bowls and garnish with fresh herbs or cheese if desired.

Notes

This soup can be made ahead of time and stored in the fridge for 3-4 days. Add a splash of broth when reheating.
