Slow Cooker Creamy Tuscan Chicken

A cozy dish featuring tender chicken in a creamy sauce with spinach and sun-dried tomatoes, perfect for any meal.

  • 2 Chicken Breasts
  • 2 cups Fresh Spinach
  • 1/2 cup Sun-Dried Tomatoes
  • 1 cup Heavy Cream
  • 1 cup Chicken Broth
  • 3 cloves Garlic, minced
  • 2 tsp Italian Seasoning
  • Salt and Pepper, to taste

Instructions

  1. Prep the chicken by seasoning with salt, pepper, and half of the Italian seasoning.
  2. Sauté the garlic in a skillet for 1-2 minutes until fragrant (optional).
  3. Layer the chicken in the slow cooker, followed by garlic, sun-dried tomatoes, and spinach. Pour in the chicken broth.
  4. Add the heavy cream and sprinkle with remaining seasoning. Stir gently.
  5. Slow cook on low for 6-8 hours or high for 3-4 hours.
  6. Finishing touches: Adjust seasoning 15 minutes before serving, adding more cream if desired.
  7. Serve by shredding or slicing the chicken directly in the slow cooker.

Notes

For a thicker sauce, mix a tablespoon of cornstarch with cold water and stir in during the last 30 minutes of cooking. Can be served over pasta, rice, or with crusty bread.
