Slow Cooker Creamy Gnocchi Chicken

A comforting and flavorful dish made with chicken, gnocchi, and creamy goodness, perfect for busy days.

  • 1 lb chicken breast
  • 1 package gnocchi (about 16 ounces)
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup spinach
  • 1 cup chopped vegetables (carrots, bell peppers, etc.)
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Prepare your chicken by rinsing the breasts and patting them dry. Season both sides with salt, pepper, and garlic powder.
  2. Load up the slow cooker with the seasoned chicken, chicken broth, and heavy cream, stirring gently to combine.
  3. Add the gnocchi, chopped vegetables, and spinach, then sprinkle Italian seasoning and garlic powder on top. Lightly stir to combine.
  4. Set the slow cooker on low for 6 hours or high for 3 hours.
  5. Shred the chicken once it’s cooked and return it to the slow cooker, mixing everything together.
  6. Serve the creamy concoction in bowls with optional toppings like fresh parsley or Parmesan cheese.
