Slow Cooker Beef Bourguignon

A cozy French classic featuring tender beef braised in rich red wine, perfect for a comforting meal.

  • 2 pounds beef chuck or stew meat
  • 4 medium carrots, cut into chunks
  • 2 medium onions, diced
  • 8 ounces mushrooms, sliced
  • 4 cloves of garlic, minced
  • 1 cup red wine
  • 2 cups beef broth
  • 34 sprigs of fresh thyme
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Brown the beef: Start by heating a tablespoon of olive oil in a large skillet over medium-high heat. Add the beef chunks, ensuring not to overcrowd the pan. Brown each side for about 5-7 minutes, then transfer to your slow cooker.
  2. Sauté the veggies: In the same skillet, add more olive oil if needed, then toss in the diced onions and minced garlic. Sauté until the onions are translucent, about 2-3 minutes. Add to the slow cooker.
  3. Layer the ingredients: Arrange the carrots and mushrooms on top of the beef and onions.
  4. Pour in the liquid gold: Add the red wine and beef broth along with thyme, bay leaves, salt, and pepper. Gently stir to combine.
  5. Set it and forget it: Place the lid on your slow cooker and set it to low for 8-10 hours or high for 4-6 hours.
  6. Taste and adjust: About 30 minutes before serving, taste the broth and adjust the seasoning if needed.

Perfect when served with crusty French bread or over creamy mashed potatoes.
