Slow Cooker Pepper Steak

A hearty, slow-cooked pepper steak dish, perfect for family gatherings and memories.

  • 1 lb beef steak (flank or sirloin)
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch (optional, for thickening)
  • Salt and pepper to taste
  • 1 tablespoon vegetable oil

Instructions

  1. Prep the ingredients: Begin by slicing your beef steak against the grain into thin strips.
  2. Sear the beef (optional): Heat the vegetable oil in a skillet over medium-high heat. Add the beef in batches and sear for about 2-3 minutes on each side until browned.
  3. Combine in slow cooker: Transfer the seared beef into your slow cooker along with the sliced bell pepper, onion, and minced garlic.
  4. Mix the sauce: In a separate bowl, whisk together the beef broth, soy sauce, and cornstarch. Pour this over the beef and veggies in the slow cooker. Season with salt and pepper.
  5. Cook low and slow: Cover and cook on low for 6-8 hours or high for 3-4 hours.
  6. Check for thickness: If a thicker sauce is desired, remove the lid and cook on high for an additional 30 minutes or mix in a cornstarch slurry before serving.
  7. Serve warm: Give it a good stir and serve warm.

Notes

Serve over rice, noodles, or with crusty bread for soaking up the sauce. Can be made ahead of time and stored in the fridge for up to 3 days.
