Slow Cooker Creamy Mushroom Chicken

A cozy and comforting dish featuring chicken simmered with mushrooms in a creamy sauce, perfect for any gathering.

  • 4 boneless, skinless chicken breasts or thighs
  • 8 oz cremini or button mushrooms, sliced
  • 2 cups chicken broth
  • 4 cloves garlic, minced
  • 1 medium onion, diced
  • 1 tsp dried thyme
  • Salt & pepper to taste
  • 1 cup cream or sour cream

Instructions

  1. Prepare the Ingredients: Gather all your ingredients for a seamless cooking process.
  2. Sauté the Aromatics (optional but recommended): In a skillet over medium heat, add a splash of oil, sauté the diced onion until translucent (about 5 minutes), then add the minced garlic and cook for another minute until fragrant.
  3. Layer in the Slow Cooker: Place your chicken at the bottom of the slow cooker, add the sautéed onion and garlic mixture on top, followed by the sliced mushrooms. Sprinkle the dried thyme, salt, and pepper over all the ingredients.
  4. Pour in the Broth: Carefully add the chicken broth, ensuring the chicken is mostly submerged.
  5. Set Your Slow Cooker: Cover and set to low for 6-8 hours or high for 3-4 hours until the chicken is tender and cooked through.
  6. Finish with Cream: Once cooking is complete, stir in the cream or sour cream until well combined.
  7. Season to Taste: Before serving, taste and adjust the seasoning if necessary.

Notes

Serve over rice or mashed potatoes, garnished with fresh parsley or paprika. Keep extra chicken broth on hand for future cooking.
