Cracked Garlic Steak Tortellini in Creamhouse Sauce Bliss

  • 20 oz cheese tortellini
  • 1 lb steak (sirloin or ribeye)
  • Salt, to taste
  • Black pepper, to taste
  • Garlic powder, to taste
  • Smoked paprika, to taste
  • 2 tbsp olive oil
  • 4 tbsp butter
  • 5 cloves garlic, minced
  • 1 cup heavy cream
  • 3/4 cup whole milk
  • 1 1/4 cups parmesan, shredded or freshly grated
  • Parsley, chopped (optional)
  • Red pepper flakes (optional)
  • Cracked black pepper (optional garnish)

Instructions

  1. Cook the Tortellini: Bring a large pot of salted water to a boil. Add the cheese tortellini and cook according to package instructions, usually around 2-3 minutes for fresh pasta. Drain and set aside, reserving a splash of pasta water.
  2. Prepare the Steak: Pat the steak dry and season both sides with salt, black pepper, garlic powder, and smoked paprika.
  3. Sear the Steak: Heat the olive oil in a skillet over medium-high heat. Sear the steak for about 4-5 minutes on each side for medium-rare. Transfer to a cutting board to rest for 5-10 minutes.
  4. Make the Sauce: In the same skillet, melt the butter, then sauté the minced garlic for about 30 seconds until fragrant. Pour in the heavy cream and whole milk, bringing to a gentle simmer.
  5. Add Parmesan: Gradually stir in the parmesan cheese and simmer until melted and thickened. Adjust with reserved pasta water if needed.
  6. Combine Tortellini and Sauce: Add the cooked tortellini to the skillet and toss until well coated.
  7. Slice the Steak: Slice the rested steak against the grain and gently fold it into the tortellini and sauce.

Notes

Serve topped with parsley, red pepper flakes, and cracked black pepper for extra flavor.
