A soul-warming Slow Cooker Broccoli Cheddar Soup that’s hearty and full of comforting flavors, perfect for chilly evenings.

Ingredients

  • 1 cup broccoli florets
  • 1 cup shredded carrots
  • 1/2 cup chopped onion
  • 3 cups vegetable or chicken broth
  • 1 cup shredded cheddar cheese
  • 1/2 cup half-and-half or heavy cream
  • Salt and pepper to taste
  • Optional: garlic powder, thyme, or other herbs

Instructions

  1. Prep your veggies by chopping broccoli, grating carrots, and finely chopping onion.
  2. Add all your prepared veggies into the slow cooker.
  3. Pour in the vegetable or chicken broth and give it a gentle stir.
  4. Season with salt, pepper, and any optional herbs, then stir again.
  5. Set the slow cooker on low for 6-8 hours or high for 3-4 hours.
  6. Add in the half-and-half or heavy cream and shredded cheddar, turning the cooker to high for 15-20 minutes to melt the cheese.
  7. Blend the soup to your preferred consistency using an immersion blender.

Notes

For a twist, consider adding cooked chicken, diced jalapeños, or fresh herbs.
