Heartwarming Chocolate Chip Zucchini Bread

  • 1 cup grated zucchini
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grate one medium-sized zucchini and squeeze out excess water.
  3. Whisk together grated zucchini, vegetable oil, granulated sugar, brown sugar, eggs, and vanilla extract.
  4. Mix the dry ingredients: all-purpose flour, baking soda, baking powder, salt, and cinnamon in a separate bowl.
  5. Combine the dry mixture into the wet ingredients, stirring gently until just combined.
  6. Fold in the chocolate chips until evenly distributed.
  7. Pour the batter into a greased loaf pan and smooth the top.
  8. Bake for 50-60 minutes, or until a toothpick inserted comes out clean.
  9. Cool for 10 minutes in the pan before transferring to a wire rack to slice.

Notes

Serve warm with butter or cream cheese frosting. Can be frozen for future enjoyment.
