Watermelon Rind Candy

  • 4 cups Watermelon rinds
  • 2 cups Granulated sugar (or brown sugar)
  • 1/2 cup Fresh lemon juice
  • 1 cup Water
  • 1/4 teaspoon Salt

Instructions

  1. Prepare the Watermelon Rinds: Cut your watermelon rinds into strips or cubes, about 1-inch thick.
  2. Soak the Rinds: In a large bowl, cover the cut rinds with cold water and let them soak for at least a few hours—or overnight.
  3. Make the Syrup: In a saucepan, combine the sugar, lemon juice, and water. Over medium heat, stir occasionally until the sugar dissolves and bring it to a gentle boil.
  4. Candy the Rinds: Add the soaked watermelon rinds to the simmering syrup, and let them simmer for about 1-2 hours, stirring occasionally.
  5. Cool and Dry: Transfer the rinds to a plate lined with parchment paper and allow them to cool and dry for a couple of hours.
  6. Enjoy: Your watermelon rind candy is ready to eat! Pack them in a jar or keep them on your kitchen counter for a sweet snack.

Notes

Optional: Add spices like cinnamon or ginger to the syrup for flavor and dry in a low oven for a chewy consistency.
