  • 1 cup pumpkin puree
  • ½ cup cocoa powder
  • 1 cup sugar (or a vegan sweetener)
  • ½ cup vegetable oil or melted coconut oil
  • 1 cup almond milk (or any plant-based milk)
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin spice
  • ½ teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare your baking pan by greasing it or lining with parchment paper.
  3. Mix the dry ingredients in a medium bowl: flour, cocoa powder, baking powder, baking soda, pumpkin spice, and salt.
  4. Combine the wet ingredients in a large bowl: pumpkin puree, sugar, vegetable oil, almond milk, and vanilla extract.
  5. Fold in the dry ingredients into the wet mixture until just combined.
  6. Divide the batter in half and fold cocoa powder into one half.
  7. Create the marble effect by alternating spoonfuls of pumpkin and chocolate batters and swirling with a knife.
  8. Bake for 25-30 minutes or until a toothpick comes out clean.
  9. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

Dust with powdered sugar, serve with plant-based whipped cream, and enjoy with hot beverages.
