Vegan Kohlrabi Side Dish

A vibrant and healthy vegan side dish featuring crunchy kohlrabi, the perfect addition to any meal.

Ingredients

  • 1 kohlrabi bulb, peeled and diced
  • Kohlrabi greens, chopped (if available)
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • 1 tablespoon lemon juice

Instructions

  1. Prepare the kohlrabi by peeling that kohlrabi bulb with a vegetable peeler and dicing it into bite-sized cubes.
  2. Cook the kohlrabi in a large skillet over medium heat with olive oil, stirring for about 5-7 minutes until slightly tender.
  3. Add the minced garlic and stir for 1-2 minutes until aromatic.
  4. Season joyfully with salt and pepper and drizzle with lemon juice, tossing to combine.
  5. Incorporate the kohlrabi greens at the end, allowing them to wilt for a minute.
  6. Serve warm in a serving bowl.

Notes

This dish pairs wonderfully with grilled tempeh or roasted chickpeas and can be garnished with fresh herbs.
