Ingredients

  • Raclette Cheese (200g per person)
  • Baby potatoes or fingerling potatoes
  • Prosciutto, salami, or smoked ham
  • Bell peppers, zucchini, and mushrooms
  • Gherkins or cornichons
  • Crusty baguette or rustic sourdough
  • Olive oil
  • Fresh thyme or rosemary
  • Black pepper and paprika (or chili flakes)

Instructions

  1. Prep your ingredients: Wash and boil the potatoes in salted water for 15-20 minutes until fork-tender. Drain and keep warm.
  2. Chop the veggies: Slice bell peppers, zucchini, and mushrooms into bite-sized pieces; marinate in olive oil, herbs, and spices.
  3. Set up the cheese: Slice or grate enough Raclette cheese for everyone.
  4. Fire up the grill: Preheat your Raclette grill as per instructions or use a cast-iron skillet/broiler.
  5. Assemble & cook: Let guests build their plates starting with potatoes, then add cheese and toppings. Melt cheese until bubbly (5-7 minutes).
  6. Serve with love: Scrape melted cheese over the ingredients, serve with pickles and fresh bread, and finish with olive oil and herbs.
