Tortellini Pasta Salad

A delightful and comforting pasta salad featuring cheesy tortellini, fresh vegetables, and zesty Italian dressing.

Ingredients

  • Cheesy Tortellini
  • Italian Dressing
  • Cherry Tomatoes
  • Bell Peppers
  • Red Onion
  • Fresh Basil
  • Parmesan Cheese
  • Olive Oil
  • Salt
  • Pepper

Instructions

  1. Cook the tortellini: Fill a large pot with salted water and bring to a boil. Add tortellini and cook according to package directions (3-5 minutes for fresh, 6-8 for frozen). Drain and rinse under cold water.
  2. Prep the veggies: Chop cherry tomatoes in half, dice bell peppers, and thinly slice red onion.
  3. Combine ingredients: In a large mixing bowl, combine the cooked tortellini, cherry tomatoes, bell peppers, and red onion.
  4. Dress it up: Drizzle Italian dressing and olive oil over the pasta and veggies. Sprinkle with salt and pepper to taste.
  5. Add the fresh herbs: Tear fresh basil leaves into pieces and sprinkle over the salad. Toss gently to combine.
  6. Final touch with cheese: Top with freshly grated or shaved parmesan cheese.
  7. Chill and serve: Refrigerate for at least 30 minutes before serving.

Notes

This pasta salad can be made ahead of time and often tastes better the next day. Adjust seasoning just before serving.
