Slow Cooker Beef & Barley Soup

  • 1 pound beef (chuck or stew meat), cubed
  • 1 cup barley
  • 4 cups beef broth
  • 2 cups carrots, diced
  • 1 cup celery, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Optional: parsley for garnish

Instructions

  1. Start by cutting your beef into 1-inch cubes. Season the meat with salt and pepper.
  2. In your slow cooker, throw in the cubed beef, barley, diced carrots, celery, chopped onion, and minced garlic.
  3. Pour in the beef broth and give everything a little stir to mix.
  4. Sprinkle in the dried thyme, and season with more salt and pepper.
  5. Cover and cook on low for 360 minutes or on high for about 240 minutes.
  6. About 30 minutes before serving, taste the soup and adjust any seasonings as necessary.
  7. Once your soup is done, ladle it into bowls, sprinkle with freshly chopped parsley, and enjoy!

Notes

This soup freezes beautifully; cool completely before transferring to an airtight container. Feel free to add additional vegetables or spices as desired for variations.
