Sweet Rhubarb Custard Tart

A delightful dessert that combines tart rhubarb with a creamy custard filling, nestled in a flaky crust.

  • 1 ½ cups all-purpose flour
  • ½ cup unsalted butter, cold and cubed
  • ¼ cup granulated sugar
  • ¼ teaspoon salt
  • 1 egg yolk
  • 2 cups rhubarb, chopped into 1-inch pieces
  • 3 eggs
  • 1 cup granulated sugar
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • 2 tablespoons cornstarch
  • Zest of 1 lemon

Instructions

  1. Mix the dry ingredients: In a large bowl, whisk together the flour, sugar, and salt until combined.
  2. Cut in the butter: Add the cold, cubed butter into the flour mixture. Using a pastry cutter or your fingers, incorporate the butter until the mixture resembles coarse crumbs.
  3. Add the egg yolk: Stir in the egg yolk, mixing until the dough comes together.
  4. Chill the dough: Shape the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  5. Preheat the oven: Preheat your oven to 375°F (190°C).
  6. Roll and fit: Roll out the chilled dough to about 1/8 inch thick and fit it into a 9-inch tart pan.
  7. Prick the bottom: Use a fork to prick the bottom of the crust.
  8. Blind bake: Line the crust with parchment paper and fill it with pie weights. Bake for about 15 minutes, then remove the weights and bake for another 5-7 minutes.
  9. Combine the filling ingredients: In a large bowl, whisk together the eggs, sugar, cream, vanilla, cornstarch, and lemon zest until smooth.
  10. Add the rhubarb: Gently fold in the chopped rhubarb.
  11. Pour the filling: Carefully pour the rhubarb custard filling into the pre-baked tart shell.
  12. Bake: Bake for about 30-35 minutes, or until the custard is set and slightly jiggly in the center.
  13. Cool: Let the tart cool completely on a wire rack before slicing.

Notes

Serve warm or at room temperature, with whipped cream or crème fraîche on top for added richness.
