Watermelon, Cucumber, and Feta Salad

A refreshing summer salad featuring juicy watermelon, crunchy cucumber, and creamy feta cheese, garnished with fresh mint and lime.

  • 2 cups watermelon, diced
  • 2 cups cucumber, diced
  • 1 cup feta cheese, crumbled
  • 1/4 cup fresh mint leaves, chopped
  • 2 tablespoons lime juice
  • Salt and pepper to taste

Instructions

  1. Prep the ingredients: Start by rinsing your watermelon and cucumber. Cut the watermelon into bite-sized cubes.
  2. Dice the cucumber: Cut the cucumber into even-sized cubes, similar in size to your watermelon.
  3. Chop the mint: Gather your mint leaves, stack them, and chop finely.
  4. Mix everything together: In a large bowl, combine the diced watermelon, cucumber, and crumbled feta. Add chopped mint.
  5. Add lime juice and seasoning: Drizzle the lime juice over your salad and add a pinch of salt and pepper.
  6. Gently toss: Use a spatula to gently toss ingredients together without smashing the watermelon.
  7. Chill (optional): Let the salad chill in the fridge for about 20–30 minutes before serving.

Notes

Feel free to substitute fresh mint with basil or cilantro. This salad is best enjoyed fresh but can be stored for 1-2 days in the fridge.
