Fresh Peach Bread

A delicious peach bread infused with the sweetness of fresh peaches, perfect for summer.

Ingredients

  • ⅓ cup butter, room temperature
  • ¾ cup sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • ⅓ cup buttermilk
  • 2¼ cups self-rising flour
  • 23 peaches, peeled and pureed
  • 23 peaches, peeled and diced
  • ½ cup chopped pecans, toasted (optional)
  • 1 cup confectioners sugar
  • ½ teaspoon vanilla (for glaze)
  • 12 tablespoons milk (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
  2. Combine the butter and sugar in a large mixing bowl, creaming them until light and fluffy.
  3. Add the eggs and vanilla, beating until fully incorporated.
  4. Pour in the buttermilk and mix until just combined.
  5. Gradually add the self-rising flour, mixing until just combined.
  6. Fold in the pureed and diced peaches, along with the toasted pecans if using.
  7. Pour the batter into the prepared loaf pan and bake for 55-65 minutes until a toothpick comes out clean.
  8. Let the bread cool in the pan for 10 minutes, then transfer it to a wire rack. While cooling, whisk together the confectioners sugar, ½ teaspoon vanilla, and 1-2 tablespoons of milk for the glaze, then drizzle it over the cooled bread.

Notes

For a vegan option, substitute eggs with flax eggs and butter with a vegan alternative. You can use frozen peaches, just thaw and drain before using.
