Street Corn Creamy Cucumber Chicken Salad

  • 2 cups grilled or roasted chicken, diced
  • 1 cup sweet corn, grilled or canned
  • 1 large cucumber, diced
  • ½ cup red onion, finely chopped
  • ½ cup mayonnaise
  • 2 tablespoons Greek yogurt
  • 1 tablespoon lime juice
  • 1 tablespoon cilantro, chopped
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt (to taste)
  • ½ teaspoon black pepper
  • Optional: crumbled feta cheese for garnish

Instructions

  1. Prep your chicken by ensuring it’s grilled or roasted and diced.
  2. Cook the corn if using fresh; otherwise, drain canned corn.
  3. Dice the cucumber and finely chop the red onion and cilantro.
  4. Mix the dressing in a bowl with mayo, Greek yogurt, lime juice, smoked paprika, salt, and black pepper.
  5. Combine all ingredients in the bowl, folding gently to coat.
  6. Chill in the fridge for 30 minutes to 1 hour.
  7. Garnish with crumbled feta before serving.
