Sticky Chicken Bowls

A luscious blend of savory, sweet, and a little kick, perfect for cozy dinners or casual get-togethers.

Ingredients

  • 3 large chicken breasts
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp onion powder
  • 1 tsp oregano
  • 1/2 cup soy sauce
  • 1/2 cup honey
  • 1/4 cup rice vinegar
  • 3 cloves garlic, minced
  • 2 tbsp sriracha
  • 2 tsp sesame oil
  • 1 tsp ground ginger
  • 2 tsp arrowroot powder mixed with 2 tbsp water
  • 1/2 cup mayo
  • 1 tbsp sriracha
  • 23 tbsp water
  • 2 cups uncooked rice
  • 2 small heads broccoli, chopped
  • Sesame seeds for topping

Instructions

  1. Prepare the chicken by slicing it into thin strips and season with salt, pepper, chili powder, smoked paprika, onion powder, and oregano.
  2. Sear the chicken in olive oil in a large skillet over medium-high heat until cooked through.
  3. Make the sticky sauce by whisking together soy sauce, honey, rice vinegar, garlic, sriracha, sesame oil, ginger, and arrowroot powder.
  4. Pour the sauce over the cooked chicken and let it thicken.
  5. Cook the rice according to package instructions.
  6. Steam the broccoli until tender-crisp.
  7. Assemble the bowls with rice, chicken, broccoli, and top with sesame seeds.
  8. Drizzle the spicy mayo over the top before serving.

Notes

Feel free to customize with your favorite veggies or adjust spices. Serve with lime wedges!
