Homemade Canned Peaches

Ingredients

  • Fresh Peaches: 8-10 ripe peaches
  • Sugar: 1 cup
  • Water: 4 cups
  • Lemon Juice: 1/4 cup
  • Cinnamon (optional): 1 tsp
  • Cloves (optional): 1/4 tsp

Instructions

  1. Prep the peaches: Wash and blanch in boiling water for 30 seconds, then transfer to an ice bath and peel off skins.
  2. Make your syrup: Combine water and sugar in a large pot over medium heat until sugar dissolves, adding cinnamon and cloves if desired.
  3. Pack the jars: Sterilize jars and pack the prepared peaches snugly into them.
  4. Add the syrup: Pour hot syrup over the peaches, leaving about 1/2 inch headspace.
  5. Seal and process: Wipe jar rims, place lids, and process in a boiling water bath for 15-20 minutes.
  6. Cool and store: Let jars cool on a clean towel and check if they sealed properly.

Notes

Choose ripe, fragrant peaches for the best results. You can also experiment with different spices for unique flavors.
