Southern Peach Bread

  • 1 cup sugar
  • 1/2 cup butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups fresh peaches, peeled and diced
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare your baking pan by greasing a 9×5-inch loaf pan.
  3. Mix your dry ingredients by whisking together flour, baking soda, and salt.
  4. Cream the butter and sugar together until light and fluffy.
  5. Add in the eggs, one at a time, then add the vanilla extract.
  6. Combine the dry ingredients into the wet mixture until just combined.
  7. Fold in the diced peaches and walnuts gently.
  8. Pour the batter into your prepared loaf pan.
  9. Bake for 50-60 minutes or until a toothpick comes out clean.
  10. Cool the bread for 10 minutes before transferring it to a wire rack.
