Slow Cooker Smothered Pork Chops

A comforting and heartwarming dish featuring tender, juicy pork chops in a savory sauce, perfect for family gatherings.

Ingredients

  • Bone-in or boneless Pork Chops
  • 1 Sweet or Yellow Onion
  • 2 cloves Freshly Minced Garlic
  • 1 cup Vegetable or Chicken Broth
  • 2 tsp Fresh Thyme (or dried)
  • Salt and Pepper to taste
  • 1 can Cream of Mushroom Soup (optional)
  • Carrots and Potatoes (optional, cut into pieces)

Instructions

  1. Pat the pork chops dry with a paper towel and season them with salt and pepper.
  2. Heat a skillet over medium-high heat, add cooking oil, and sear the pork chops for 3-4 minutes on each side.
  3. Add the sliced onions and garlic to the same skillet and sauté until translucent (3-5 minutes).
  4. Place seared pork chops in the slow cooker and top with sautéed onions and garlic.
  5. Pour in the broth and add thyme (and cream of mushroom soup if using), stirring gently.
  6. Cover and cook on low for 6-8 hours or high for 3-4 hours until fork-tender.
  7. Taste and adjust seasoning 30 minutes before serving, thickening with cornstarch slurry if needed.

Notes

Serve over creamy mashed potatoes or rice, and enjoy the amazing sauce drizzled over your dish.
