  • 1/2 cup maple syrup
  • 1/4 cup Dijon mustard
  • 2 cups carrots, chopped
  • 2 cups potatoes, chopped

  • Salt and pepper to taste

Instructions

  1. Prep the pork loin: Pat dry with paper towels, season with salt and pepper.
  2. Sear the loin (optional): Heat oil in a skillet and sear the pork until golden brown.
  3. Assemble the vegetables: Place chopped carrots and potatoes at the bottom of the slow cooker.
  4. Mix the sauce: Whisk together maple syrup and Dijon mustard, add thyme.
  5. Place the pork in the slow cooker: Pour sauce over and add broth around the sides.

  7. Cook away: Cover and cook on low for 6-8 hours or high for 3-4 hours.
  8. Check for doneness: Ensure the pork reaches an internal temperature of 145°F.
