  • 1.5 lbs chicken thighs or breasts
  • 2 cups mixed vegetables (carrots, bell peppers, onions)
  • 1 cup chicken broth
  • 2 tablespoons lemon juice
  • 2 teaspoons dried oregano
  • 2 teaspoons dried thyme
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Prepare the ingredients by cutting your chicken into large chunks and chopping the vegetables into bite-sized pieces.
  2. Season the chicken with oregano, thyme, garlic powder, salt, and pepper. Let it sit for about 10 minutes for the flavors to develop.
  3. Layer the mixed vegetables in the bottom of the slow cooker, then place the seasoned chicken on top.
  4. Add the chicken broth and lemon juice, ensuring not to stir.
  5. Cook on low for 6-8 hours or high for about 4 hours until the chicken is tender.
  6. Check the chicken’s internal temperature, ensuring it reaches 165°F (75°C) about 30 minutes before serving.
  7. Serve the lemon herb chicken over rice, couscous, or mashed potatoes, drizzling with savory juices.

Notes

For a spicy kick, add red pepper flakes. For a vegetarian version, replace chicken with chickpeas or tofu.
