Slow Cooker Italian Sausage & Peppers

A hearty dish of Italian sausage and mixed peppers cooked to perfection in a slow cooker, bringing back fond kitchen memories.

Ingredients

  • Italian Sausage (sweet or spicy)
  • Bell Peppers (red, yellow, and green)
  • Onions (yellow or sweet)
  • Garlic (fresh cloves)
  • Broth (chicken or vegetable)
  • Italian Herbs (Oregano and Basil)
  • Salt and Pepper

Instructions

  1. Prep your ingredients by slicing bell peppers and onions into bite-sized pieces.
  2. Sauté the sliced onions and garlic in a skillet with olive oil for 2-3 minutes.
  3. Add everything into the slow cooker: sautéed onions and garlic, bell peppers, Italian sausage, and broth.
  4. Set the slow cooker on high (1-2 hours) or low (6-8 hours).
  5. Let it cook until the sausages are juicy and peppers are softened, then serve hot.

Notes

Serve it in hoagie rolls, polenta, or over pasta. Top with parsley and grated Parmesan cheese for added flavor.
