Slow Cooker Ham & Bean Soup

A warm and hearty ham and bean soup made in a slow cooker, perfect for cozy family dinners.

  • 2 cups leftover ham, diced
  • 2 cans navy or pinto beans, rinsed
  • 2 cups carrots, diced
  • 2 cups celery, diced
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 teaspoon thyme, dried or fresh
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Prepare the ingredients: Start by dicing your ham, carrots, celery, and onion into bite-sized pieces. Mince the garlic.
  2. Layer in the slow cooker: Toss all the chopped ingredients into your slow cooker: ham, beans, carrots, celery, onion, and garlic.
  3. Add liquids and spices: Pour in your broth until all the ingredients are covered. Add the thyme, bay leaf, salt, and pepper.
  4. Set and forget: Cover the slow cooker and set to low for 360-480 minutes, or high for 180-240 minutes.
  5. Taste test time: Remove the bay leaf and taste the soup. Adjust seasoning with salt and pepper if needed.
  6. Serve it up: Ladle the soup into bowls and garnish with fresh parsley.

Notes

This soup pairs well with crusty bread or cornbread. It can also be stored in airtight containers for freezing.
