Slow Cooker French Onion Pot Roast

A comforting Slow Cooker French Onion Pot Roast that combines tender beef, sweet caramelized onions, and savory herbs for a soul-warming meal.

  • 3 to 5 lbs Beef Roast (Chuck or Sirloin)
  • 4 Yellow Onions, sliced
  • 1 cup Beef Broth (low-sodium if desired)
  • 4 cloves Garlic, minced
  • 2 tbsp Fresh Thyme (or 1 tsp dried)
  • 2 Bay Leaves
  • Salt & Pepper, to taste
  • 3 Carrots, sliced
  • 2 Potatoes (Russet or Yukon Gold), chopped

Instructions

  1. Prep the beef by patting it dry and seasoning generously with salt and pepper.
  2. Sear the roast in hot skillet with oil, about 4-5 minutes per side.
  3. Caramelize the onions in the same skillet until softened, about 10 minutes, adding broth if necessary.
  4. Layer the seared roast in the slow cooker and top with caramelized onions, garlic, thyme, and bay leaves.
  5. Pour the beef broth in until it covers the roast halfway.
  6. Add sliced carrots and potatoes around the roast.
  7. Set the slow cooker to LOW for 8 hours or HIGH for 4-5 hours and cover.
  8. Check if the roast shreds easily with a fork before serving.

Notes

Serve with a sprinkle of fresh thyme and enjoy with warm baguette or salad.
