Skinny Poolside Dip

A refreshing dip featuring zesty ranch, sweet corn, and crispy veggies, perfect for summer gatherings.

Ingredients

  • 8 ounces cream cheese (room temperature)
  • 1 packet ranch dressing mix (dry)
  • 15 ounces canned corn (drained)
  • 1 small can black olives, drained and sliced
  • 1 cup red bell pepper (finely diced)
  • Optional: 4 ounces green chilis (drained)
  • Optional: 1 whole jalapeno (diced)

Instructions

  1. Combine cream cheese and ranch dressing mix in a mixing bowl until smooth.
  2. Add drained corn, sliced black olives, and red bell pepper to the bowl and fold gently.
  3. Incorporate optional green chilis and diced jalapeño if desired, stirring to blend flavors.
  4. Transfer the dip to a serving bowl, cover, and chill in the fridge for at least 30 minutes.
  5. Serve with tortilla chips or veggie sticks and enjoy!

Notes

This dip can be made ahead of time and improves in flavor when allowed to sit. Experiment with ingredients based on what you have!
