  • 1 ½ cups rolled oats or all-purpose flour
  • 2 large eggs
  • 1 cup dairy (milk, yogurt or a non-dairy substitute)
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ½ cup sweetener (sugar or honey)
  • 1 cup cranberries (optional)
  • 1 teaspoon baking powder (if using flour)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grab a standard loaf pan (about 9×5 inches) and either grease it or line it with parchment paper.
  3. In a large mixing bowl, mix oats or flour with baking powder, cinnamon, nutmeg, and sweetener until combined.
  4. In another bowl, whisk the eggs and add milk. Then mix in diced apples and cranberries.
  5. Pour the wet mixture into the dry ingredients and stir gently to combine.
  6. Pour the batter into the prepared loaf pan and bake for about 50-60 minutes.
  7. Once done, let the loaf cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
