Scalloped Kohlrabi

A comforting and hearty twist on the classic scalloped dish using kohlrabi, creamy and cheesy with layers of flavor.

Ingredients

Scale
  • 2 medium kohlrabi, peeled and sliced thinly
  • 1 cup heavy cream
  • 1 cup shredded cheese (such as cheddar or mozzarella)
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • 1 tablespoon butter
  • 1 teaspoon fresh thyme (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the kohlrabi by peeling and thinly slicing it.
  3. Sauté the garlic in melted butter until fragrant.
  4. Layer half of the kohlrabi in a greased baking dish, season with salt and pepper, and pour half of the cream on top.
  5. Add half of the cheese and thyme, then repeat layering.
  6. Bake covered with foil for 30 minutes, then uncovered for an additional 15-20 minutes.
  7. Cool for a few minutes, then serve.

Notes

This dish can be prepared in advance and refrigerated before baking. Experiment with different herbs or add spinach for variation.
