Scalloped Kohlrabi

A cozy and creamy scalloped kohlrabi dish that evokes warm memories and delightful flavors.

Ingredients

  • 2 medium kohlrabi bulbs
  • 1 cup heavy cream
  • 1 cup shredded cheese (cheddar or Gruyère)
  • 1 onion, thinly sliced
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 tablespoon butter
  • 1 teaspoon fresh thyme (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the kohlrabi by peeling and slicing into thin rounds.
  3. Sauté the onion and garlic in butter over medium heat for about 5-7 minutes.
  4. Make the creamy mixture by combining heavy cream, half of the cheese, salt, and pepper.
  5. Layer a third of the kohlrabi slices in a greased baking dish and add half of the onion mixture and half of the creamy mixture.
  6. Repeat the layering process, finishing with kohlrabi and remaining cheese on top.
  7. Bake covered for 35-40 minutes, then uncover and bake for an additional 15 minutes until bubbly.
  8. Let it cool for 10 minutes before slicing and serving warm.

Notes

For a spicier version, add red pepper flakes to the cream mixture. Other vegetables like potatoes can also be substituted for kohlrabi.
