Rhubarb Custard Tart

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, chilled and diced
  • 1/4 cup sugar
  • 1/4 tsp salt
  • 1/4 cup ice water
  • 2 cups rhubarb, sliced
  • 1/2 cup sugar (for rhubarb filling)
  • 4 large eggs
  • 1 cup milk
  • 1/2 cup heavy cream
  • 1/4 cup sugar (for custard)
  • 1/2 tsp ground ginger
  • 1 tsp vanilla extract

Instructions

  1. Prepare the Tart Crust: In a large mixing bowl, combine flour, sugar, and salt. Mix gently until blended. Add the chilled, diced butter and work it into the flour until the mixture resembles coarse crumbs. Gradually add the ice water, one tablespoon at a time, mixing with a fork until the dough holds together. Form the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  2. Prepare the Rhubarb Filling: While the dough chills, slice the rhubarb into thin pieces. Mix this with 1/2 cup of sugar in a medium bowl. Set aside to let the rhubarb release some juices.
  3. Make the Custard: In another bowl, whisk together the eggs, milk, cream, 1/4 cup sugar, ground ginger, and vanilla extract until smooth.
  4. Roll Out the Dough: Preheat your oven to 375°F (190°C). Take the crust dough out of the fridge and roll it out to fit your 9-inch tart pan. Transfer it to the pan, pressing it into the sides gently.
  5. Assemble the Tart: Pour the rhubarb mixture evenly over the crust. Carefully pour the custard mixture over the rhubarb.
  6. Bake the Tart: Bake in the preheated oven for about 35-45 minutes, until the custard is set and golden brown.
  7. Cool and Serve: Allow the tart to cool for at least 15 minutes before serving. Dust with powdered sugar and serve with whipped cream or ice cream.

Notes

Experiment with different fruits or spices. If the rhubarb is overly tart, balance it with extra sugar.
