Watermelon, Cucumber, and Feta Salad

A refreshing summer salad that’s light and vibrant, combining sweet watermelon, crisp cucumbers, and salty feta cheese.

Ingredients

  • 4 cups watermelon, cubed
  • 2 large cucumbers, sliced into half-moons
  • 4 oz good feta cheese, crumbled
  • 1/4 cup red onion, thinly sliced (optional)
  • 1/4 cup fresh mint leaves, torn
  • 2 tbsp olive oil
  • 1 whole lime, juiced
  • 1 pinch salt
  • 1 dash fresh cracked black pepper
  • 1 handful toasted pine nuts or pumpkin seeds (optional)

Instructions

  1. Prepare the ingredients by gathering everything and cubing the watermelon.
  2. Slice the cucumbers into half moons about 1/4-inch thick. Optional: sprinkle with salt to remove excess water.
  3. Mix the watermelon cubes, sliced cucumbers, and crumbled feta cheese in a large bowl.
  4. Dress by mixing the olive oil, lime juice, salt, and black pepper, then drizzle over the salad.
  5. Add the torn mint leaves and gently toss to combine.
  6. Chill the salad in the fridge for about 30 minutes before serving to enhance the flavors.
  7. Serve in a bowl, optionally garnished with more mint and a drizzle of olive oil.

Notes

For a sweeter salad, add honey to the dressing if the watermelon isn’t sweet enough. To prevent excess water, prepare cucumbers with a pinch of salt before rinsing.
