Red, White & Blue Cheesecake Salad

A creamy, fruity dessert that brings together the colors of the American flag, perfect for summer gatherings.

  • 2 pounds strawberries
  • 1 pint blueberries
  • 1 (8-oz.) package cream cheese, at room temperature
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 2 cups powdered sugar
  • 1 large (16-oz.) tub Cool Whip, thawed
  • 4 cups mini marshmallows

Instructions

  1. Rinse the strawberries and blueberries. Slice the strawberries into quarters or halves, depending on their size.
  2. Beat the softened cream cheese with an electric mixer until smooth and creamy.
  3. Mix in the vanilla extract and salt, gradually adding the powdered sugar.
  4. Fold in the thawed Cool Whip until there are no visible streaks.
  5. Add in the mini marshmallows and gently mix to combine.
  6. Fold in the strawberries and blueberries, ensuring they are well-distributed.
  7. Cover the salad with plastic wrap and chill in the refrigerator for at least 2 hours.
  8. Serve portions into individual bowls or a large serving dish, garnishing with extra berries.

Notes

Adjust sweetness to your preference; can substitute other fruits. For a lighter texture, use mascarpone cheese.
