  • 4 medium potatoes, boiled
  • 1 cup pickles (cornichons)
  • 1 cup cured meats (e.g., prosciutto, salami)
  • 1 tablespoon olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • 1 tablespoon fresh herbs (e.g., parsley, chives)
  • Salt and pepper to taste

Instructions

  1. Prepare the Potatoes: Boil your potatoes in salted water until fork-tender (about 15-20 minutes). Keep the skin on for added flavor, then slice them into halves or quarters.
  2. Melt the Cheese: Slice raclette cheese into thick wedges and place it in the melting compartments of a raclette grill, or on a baking sheet under a broiler for about 5-10 minutes until bubbling.
  3. Prepare the Sauces: In a bowl, mix together olive oil, red wine vinegar, minced garlic, and Dijon mustard. Season with salt, pepper, and fresh herbs to taste.
  4. Arrange the Platter: On a serving platter, arrange boiled potatoes, pickles, and cured meats, drizzling the melted cheese over the top.
  5. Serve & Enjoy: Get plates ready, and enjoy by topping warm potatoes with melted cheese, sauces, and pickles.

Notes

Use fresh herbs for garnish. For a vegetarian version, substitute cured meats with grilled vegetables.
