Raclette Pasta Party

Creamy Raclette cheese paired with pasta and a variety of delicious sauces, perfect for cozy gatherings.

Ingredients

  • Pasta of your choice (about 400g)
  • Water (for boiling)
  • Salt (to taste)
  • Raclette cheese (400g or to taste)
  • Heavy cream (1 cup)
  • Fresh mushrooms (200g, sliced)
  • Garlic (2 cloves, minced)
  • Butter (2 tablespoons)
  • Thyme (1 teaspoon, dried)
  • Crushed tomatoes (1 can, about 400g)
  • Fresh basil (a handful)
  • Basil pesto (about 1 cup)
  • Mayonnaise (1 cup)
  • Sriracha sauce (to taste)
  • Lemon juice (1 tablespoon)

Instructions

  1. Boil the water in a large pot; add salt when it reaches a rolling boil.
  2. Add the pasta and cook according to package directions, usually 8-10 minutes until al dente. Stir occasionally!
  3. Drain the pasta and set aside, reserving about a cup of pasta water.
  4. Melt the Raclette cheese and heavy cream in a small saucepan over low heat until melted and creamy, stirring constantly.
  5. Taste and add salt if necessary to the cheese sauce.
  6. In a pan, melt butter over medium heat for the mushroom sauce.
  7. Add sliced mushrooms and cook until golden (about 5-7 minutes), then stir in garlic and thyme.
  8. In another saucepan, add crush tomatoes and simmer for 10 minutes, then stir in chopped fresh basil.
  9. Combine the basil pesto with a little olive oil to make it drizzlable.
  10. Mix together mayonnaise, sriracha sauce, and lemon juice for the spicy garlic aioli.
