Lazy-Girl Healthy Kohlrabi Quiche

A hearty, satisfying quiche made with kohlrabi and spinach that’s as easy to make as it is delicious.

Ingredients

  • 1 medium kohlrabi, peeled and grated
  • 1 cup spinach, chopped
  • 4 large eggs
  • 1 cup milk or dairy-free alternative
  • 1 cup shredded cheese (e.g., cheddar or mozzarella)
  • 1/2 cup onion, diced
  • Salt and pepper to taste
  • 1 pre-made pie crust (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare your pie dish. Fit the crust into a 9-inch pie dish or grease the dish if going crustless.
  3. Sauté the onions in olive oil for 3-4 minutes, then add spinach and kohlrabi, cooking for another 2-3 minutes.
  4. Whisk the eggs and milk with salt and pepper. Stir in cheese.
  5. Combine the sautéed veggies with the egg mixture.
  6. Fill the pie dish with the mixture.
  7. Bake for 35-40 minutes, until golden brown.
  8. Cool for 10 minutes before slicing and serving.

Notes

For extra flavor, add fresh herbs or experiment with different cheese combinations.
