Kohlrabi Carrot Apple Salad with Nuts & Fresh Herbs

A crunchy and refreshing salad featuring kohlrabi, carrots, and apples, perfect for any occasion.

  • 1 large kohlrabi, peeled and finely julienned or grated
  • 2 medium-sized carrots, grated into fine strips
  • 12 apples (like Granny Smith or Braeburn), cored and diced
  • 50g walnuts or almonds, roughly chopped
  • A bunch of fresh parsley and/or chives, finely chopped
  • 3 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon honey or agave syrup
  • Salt and pepper, to taste

Instructions

  1. Prepare the Veggies: Start by peeling your kohlrabi. Once peeled, julienne or grate it.
  2. Grate the Carrots: Grate your carrots until they look like vibrant orange strands.
  3. Dice the Apples: Core and chop your apples into small cubes, tossing them in a splash of lemon juice to prevent browning.
  4. Chop the Nuts: Roughly chop your walnuts or almonds and toast them for enhanced flavor.
  5. Mixing the Greens: In a large bowl, combine your kohlrabi, carrots, apples, and nuts.
  6. Prepare the Dressing: Whisk together the olive oil, apple cider vinegar, honey, and a pinch of salt and pepper.
  7. Toss and Serve: Drizzle the dressing over the salad and toss gently to combine.
  8. Plate It Up: Serve the salad in bowls or on a platter, garnished with extra nuts and herbs.

Notes

Best enjoyed fresh, but can be made in advance. Dress right before serving to maintain crunch.
