  • ½ cup canned coconut milk
  • ½ cup canned pumpkin or homemade pumpkin puree
  • 1 teaspoon pumpkin pie spice
  • 2 medjool dates (pitted)
  • 1 tablespoon hemp seeds (optional)
  • 34 cubes of ice
  • Toppings: whipped cream and cinnamon (optional)

Instructions

  1. Gather your ingredients: Start by prepping your ingredients. Make sure your dates are pitted and that you have all the delicious elements ready to blend.
  2. Blend the base: In a blender, combine the coconut milk and pumpkin puree. Blend until smooth.
  3. Add the spice and sweetness: Toss in the pumpkin pie spice and pitted medjool dates. Blend again until all the bits are incorporated.
  4. Throw in the seeds: If you’re using hemp seeds, add them now along with the ice cubes. Blend until well combined.
  5. Taste test: Give your smoothie a little taste. Adjust sweetness or spice to your liking.
  6. Serve and enjoy: Pour your smoothie into a glass. Top with whipped cream and a sprinkle of cinnamon if desired.
