Cozy Pumpkin Gnocchi with Spinach and Sausage

A warm and comforting dish featuring potato gnocchi, pumpkin puree, fresh spinach, and crumbled sausage, perfect for autumn.

  • 1 package shelf-stable potato gnocchi
  • 1 cup pumpkin puree
  • 2 cups fresh spinach
  • 1/2 pound sausage (Italian or preferred type), crumbled
  • 1 cup heavy cream
  • 1 teaspoon fresh thyme, chopped
  • 1 teaspoon fresh sage, chopped
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Prepare the sausage. In a large skillet over medium heat, add a drizzle of olive oil. Once hot, crumble your sausage into the pan and cook until browned and crispy, about 5-7 minutes.
  2. Add spinach. Once the sausage is cooked, toss in the fresh spinach and sauté for 2-3 minutes until wilted.
  3. Incorporate pumpkin and cream. Add the pumpkin puree and heavy cream to the skillet, stirring well. Let it simmer gently for about 5 minutes.
  4. Season to perfection. Sprinkle in thyme, sage, salt, and pepper. Adjust seasoning to taste.
  5. Cook the gnocchi. Boil the gnocchi according to package instructions, usually for 2-3 minutes until they float. Use a slotted spoon to transfer them into the skillet.
  6. Combine and serve! Toss the gnocchi in the sauce until coated and let everything heat for 1-2 minutes before serving.

Notes

Serve with freshly grated Parmesan cheese and a drizzle of olive oil. This dish can be complemented with a light salad or crusty bread.
