Ingredients

  • 1 medium pumpkin, peeled and cubed
  • 1 can coconut milk
  • 2 tablespoons curry powder
  • 1 teaspoon turmeric powder
  • 1 tablespoon ginger, minced
  • 1 tablespoon garlic, minced
  • 1 cup cooked chickpeas (or canned, rinsed)
  • Salt to taste
  • Pepper to taste
  • Oil for roasting
  • Rice or flatbread for serving

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cube your pumpkin into bite-sized pieces.
  3. Oil and season the pumpkin cubes with oil, salt, and pepper.
  4. Roast for about 25-30 minutes until fork-tender and caramelized.
  5. Sauté garlic and ginger in a pot over medium heat until fragrant.
  6. Add curry powder and turmeric, stirring well to coat.
  7. Pour in coconut milk and bring to a gentle simmer.
  8. Toss in the cooked chickpeas and simmer for about 5 minutes.
  9. Combine the roasted pumpkin with the curry pot and simmer for an additional 5 minutes.
  10. Serve hot with rice or flatbreads.
