A warm and inviting dish of spiced poached pears topped with crunchy almond crisps, perfect for chilly evenings.

Ingredients

  • 4 ripe yet firm pears (e.g., Bosc or Anjou)
  • 1 cup sugar
  • 2 cups water
  • 1 lemon (juice and zest)
  • 1 cinnamon stick
  • 1 star anise
  • Pinch of salt
  • 1 cup sliced almonds
  • 2 tbsp sugar (for almonds)
  • 1 tbsp butter (melted)

Instructions

  1. Prepare the Poaching Liquid: In a large saucepan, combine the sugar, water, lemon juice, lemon zest, cinnamon stick, star anise, and a pinch of salt. Bring this mixture to a gentle boil over medium heat.
  2. Prep the Pears: While the poaching liquid heats up, peel the pears, leaving the stems intact.
  3. Poach the Pears: Once the liquid is boiling, reduce the heat to low and gently place the pears into the syrup. Cover the saucepan and let them poach for about 25-30 minutes.
  4. Toast the Almonds: Preheat your oven to 350°F (175°C). Toss the sliced almonds with the melted butter and sugar on a baking sheet. Toast for about 10 minutes or until golden brown.
  5. Cool and Serve: Once the pears are perfectly poached, carefully remove them from the syrup and let them cool slightly. Drizzle with poaching syrup and sprinkle with toasted almond crisps.

Notes

Consider adding a splash of rum or bourbon to the poaching syrup for an adult twist, or use honey for a naturally sweet treat.
