Poires Belle-Hélène

A classic French dessert featuring poached pears drenched in dark chocolate sauce, topped with crunchy almonds for a delightful treat.

  • 4 ripe pears
  • 200g dark chocolate
  • 50g sliced almonds
  • 100g sugar
  • 1 vanilla bean
  • 750ml water
  • 1 tablespoon lemon juice

Instructions

  1. Prepare your ingredients by gathering everything on the counter.
  2. Combine water and sugar in a medium-sized pot. Bring it to a simmer over medium heat, stirring occasionally until the sugar fully dissolves.
  3. Split the vanilla bean in half and scrape the seeds into the simmering sugar water. Toss in the empty pod for extra flavor.
  4. Add the lemon juice to the pot.
  5. Peel the pears carefully, leaving the stems intact.
  6. Place the pears into the pot, ensuring they’re submerged in the syrup. Let them poach for about 20-25 minutes, or until fork-tender.
  7. Chop the dark chocolate into pieces and place it in a heatproof bowl.
  8. Melt the chocolate gently using a double boiler or in a microwave.
  9. Toast the sliced almonds in a dry skillet over medium heat until golden brown.
  10. Remove the poached pears from syrup using a slotted spoon and arrange them on a serving platter.
  11. Drizzle the melted chocolate over the pears and sprinkle with toasted almonds.

Notes

Serve with vanilla ice cream or a dollop of whipped cream for an elegant touch.
