Pesto Grilled Cheese

A delicious twist on a classic grilled cheese sandwich, infused with herby, garlicky pesto for a melty masterpiece.

  • 2 slices of bread (sourdough, whole grain, or classic white)
  • 2 slices of cheese (cheddar, mozzarella, or provolone)
  • 2 tablespoons of pesto (homemade or store-bought)
  • Butter or olive oil (for grilling)

Instructions

  1. Prep your ingredients by getting everything out on your kitchen countertop.
  2. Spread one tablespoon of pesto on one side of the first slice of bread, then layer one slice of cheese on the unspiced side.
  3. Assemble the sandwich by spreading the second tablespoon of pesto on one side of the second slice of bread and placing it on top of the cheese, pesto-side down.
  4. Get grilling in a non-stick skillet over medium heat with a pat of butter or drizzle of olive oil for about 3-4 minutes until golden brown.
  5. Flip the sandwich over and add more butter or oil, cooking for another 3-4 minutes until both sides are crispy and golden.
  6. Slice the sandwich in half and serve immediately.

Notes

For an extra flavorful twist, add different cheese types or vegetables like sautéed spinach or roasted peppers.
