Vanilla Pear Muffins

Delightful muffins infused with sweet vanilla and juicy pears, perfect for cozy autumn days.

  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 1/3 cup vegetable oil
  • 2 large eggs
  • 2 ripe pears, peeled and diced

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a muffin tin by greasing it or lining it with paper liners.
  3. Mix the dry ingredients in a large bowl: all-purpose flour, whole wheat flour, granulated sugar, brown sugar, baking powder, baking soda, and salt.
  4. Combine the wet ingredients in a separate bowl: whisk eggs, milk, vegetable oil, and vanilla extract until frothy.
  5. Mix the wet mixture into the dry ingredients gently until just combined.
  6. Fold in the diced pears, being careful not to mush them.
  7. Fill each muffin cup about 2/3 full with the batter.
  8. Bake for 18-20 minutes or until a toothpick comes out clean.
  9. Cool in the tin for 5 minutes before transferring to a wire rack to cool completely.

Notes

Serve warm with butter or cream cheese, and feel free to sprinkle cinnamon on top!
